Orange Kefir-Curry Fried Chicken
Here’s an accidental home run of a recipe from a customer who found herself without any buttermilk: Orange Kefir-Curry Fried Chicken!!!
INGREDIENTS
1 whole chicken in parts
1 Butterworks Orange Sunshine Kefir
Generous amount ground mild curry powder (1/4 cup-ish)
Cayenne or chili powder to taste
2 cups flour mixed with salt and pepper for dredging
Frying oil (sunflower works well)
INSTRUCTIONS
Whisk spices into kefir and marinade chicken for several hours or overnight n the fridge.
Heat oil in large, deep pot – like a cast iron Dutch oven, to 350F.
Drain excess kefir mix off each piece of chicken and dredge in flour mix right before adding to the hot oil. Fry in small batches, for about 10 minutes total, rotating the pieces every 2-3 minutes.
