Kefir Makes a Tasty Salad Dressing Base
Our Kingdom Kefir is a popular snack and smoothie ingredient, lauded for being low in calories and heavy on healthful probiotics. It also readily transforms into a variety of great salad toppers be they made of fruit or greens. Kefir, unlike Greek yogurt, is already the perfect consistency for making dressing.
Although we think this Avocado-Kefir dressing is dynamite on summer tomatoes, we also love it with beets and roasted potatoes, or as a taco topper or veggie dip.
Tomato Stacks w/ Avocado Kefir Dressing
You will need a blender to make the Avocado-Cilantro Kefir dressing
Ingredients
3-4 large ripe tomatoes, sliced into thick rounds
4 ripe avocados, peeled, pitted and cut into thick slices
1 pint Butterworks Kingdom Kefir (plain, whole milk kefir)
2 bunches cilantro, roughly chopped
2 bunches scallions with thin green parts removed, sliced
2 small red onions, chopped
2 cloves garlic
Juice of 1 lemon
1/2 cup olive oil
Salt + Pepper
Instructions
MAKE DRESSING
Purée in blender:
1 bunch chopped cilantro
1 bunch sliced scallions
Both cloves garlic
1 chopped red onion
All lemon juice
All olive oil
1 avocado
1 pint plain kefir
Generous sprinkle of salt and pepper
ASSEMBLE STACKS
Starting with a base layer of tomato slices, build an alternating stack of tomatoes and avocados, sprinkling each layer with other chopped veggies, like so:
LAYER 1
Tomatoes
Sliced avocados
Chopped cilantro
Chopped red onion
Chopped scallions
LAYER 2
Tomatoes
Sliced avocados
Chopped cilantro
Chopped red onion
Chopped scallions
LAYER 3
Same as above layers, but top off with one last tomato….
Pour Avocado-Cilantro Kefir dressing over top and enjoy!.
